🥑 Avocado juice (Gulf style)
Gulf-style avocado juice is less a juice than a thick, spoonable smoothie: ripe avocado blended with cold milk, sugar, honey and ice until velvety and pale green. It tastes mild, sweet and creamy rather than savoury. Juice bars across Saudi Arabia, the UAE and Kuwait serve it in tall cups, often layered with other fruit cocktails and eaten with both a spoon and a straw.

Recipe
Ingredients
- 2 ripe avocados (about 300 g flesh)
- 400 ml cold milk
- 2 tbsp sugar
- 1 tbsp honey, plus a little to drizzle
- 1 cup ice cubes (about 150 g)
Method
- Scoop the avocado flesh into a blender.
- Add the milk, sugar, honey and ice and blend for about 1 minute until completely smooth and thick.
- Taste, add a splash of milk if it is too thick, pour into tall glasses and drizzle with a little honey.
How to make it lighter
- Skip the sugar and keep only the honey — 1 tbsp sugar is about 50 kcal, 1 tbsp honey about 60 kcal.
- Use skimmed or low-fat milk: the avocado keeps it creamy anyway.
- Order a small cup — a large juice-bar avocado cocktail can be as filling as a meal.
History
Avocado juice spread through Gulf juice bars alongside mango and strawberry cocktails and is now a standard item on their menus across the region.
