🍰 Bolo de bolacha (Portuguese biscuit cake)
Bolo de bolacha is a no-bake Portuguese cake made by dipping plain round biscuits in strong coffee and layering them with a sweet butter cream. After a night in the fridge the biscuits soften into a cake-like texture under the cream, with a clear coffee flavour. It is finished with crushed biscuit crumbs on top and served in neat chilled slices.

Recipe
Ingredients
- 400 g plain round biscuits (Maria-type)
- 250 g unsalted butter, softened
- 150 g icing sugar
- 300 ml strong coffee, cooled
- 1 tbsp sugar for the coffee (optional)
Method
- Beat the butter with the icing sugar for 5–7 minutes until pale and fluffy, adding 2 tbsp of the coffee at the end.
- Sweeten the rest of the coffee if you like. Dip each biscuit quickly in the coffee — a second or two, so it does not fall apart.
- Lay a layer of dipped biscuits on a plate, spread thinly with butter cream and repeat, building 6–8 layers.
- Cover the top and sides with the remaining cream and sprinkle with a few crushed biscuits.
- Chill for at least 4 hours, ideally overnight, before slicing.
How to make it lighter
- It is rich — butter is about 100 kcal per tablespoon — so cut thin slices and log each one.
- Spread the cream in thin layers and skip the cream on the sides to save a good share of the fat.
- Leave the coffee unsweetened; the cream already brings plenty of sugar.
History
Bolo de bolacha is a homemade dessert found across Portugal and in Portuguese communities abroad, popular at birthdays and family gatherings because it needs no oven.
