🥟 Lamb ouzi in phyllo
Ouzi in phyllo is a baked parcel of crisp pastry wrapped around rice spiced with baharat, tender lamb, green peas, carrots, raisins and toasted almonds. Each portion is shaped into a dome or bundle and baked until the shell is golden and flaky. Inside, the filling is fragrant, sweet-savoury and rich, and it is often served with salads or pickles.

Recipe
Ingredients
- 12 sheets phyllo pastry
- 300 g long-grain rice
- 400 g lamb, diced small
- 150 g green peas
- 1 carrot, diced
- 40 g raisins
- 50 g almonds, toasted
- 2 tsp baharat, 1 tsp cinnamon, salt
- 3 tbsp vegetable oil
Method
- Brown the lamb in 1 tbsp oil, season with spices and salt, add water and simmer for 40 minutes until tender.
- Add the rice, carrot and enough water to cook it through, about 15 minutes; stir in the peas, raisins and almonds.
- Line small bowls with 2 crossed phyllo sheets brushed lightly with oil.
- Fill with the rice mixture, fold the pastry over and turn the parcels out onto a tray, seam down.
- Brush the tops lightly with oil and bake at 190 °C for 20–25 minutes until golden.
How to make it lighter
- Brush the phyllo with a thin film of oil — each tablespoon adds about 120 kcal.
- Use lean lamb and cut the almonds and raisins by half.
- One parcel with a big green salad makes a full plate.
History
Phyllo-wrapped ouzi is especially associated with Syrian and Lebanese celebration cooking, where individual pastry parcels became a party-friendly version of the large roast lamb and rice platter served at weddings and holidays.
