🍟 Cheese loaded fries
Cheese loaded fries are crispy deep-fried potato fries smothered in warm, gooey cheese sauce and topped with sliced jalapeños. The contrast of crunchy fries, creamy sauce and sharp chili heat makes them a favourite snack. They are served in a tray or basket to share, eaten hot before the fries soften.

Recipe
Ingredients
- 800 g potatoes, cut into fries
- Oil for deep-frying
- 20 g butter and 20 g flour
- 250 ml milk
- 120 g cheddar, grated
- 2 jalapeños, sliced
- Salt
Method
- Soak the cut potatoes in cold water for 20 minutes and dry well.
- Fry at 160 °C for 5 minutes, drain, then fry again at 180 °C for 3–4 minutes until golden. Salt them.
- For the sauce, cook the butter and flour 1 minute, whisk in the milk, simmer until thick, then melt in the cheese.
- Pour the sauce over the hot fries and top with jalapeños.
How to make it lighter
- Oven-bake the fries with 1 tbsp oil instead of deep-frying to cut a large share of the fat.
- Serve the cheese sauce on the side for dipping — you will use less of it.
- Share one tray between two or three as a side, not a meal.
History
Fries topped with cheese sauce are a staple of American diners, stadiums and fast-food menus, and loaded fries are now sold by street food stalls in many countries.
