Rabo de toro is a Spanish oxtail stew braised for hours in red wine with onion, carrot, garlic and bay leaf until the meat slides off the bone. The sauce reduces to a deep, glossy gravy rich with gelatine. It is served hot, usually with potatoes, and is a staple of Andalusian taverns.

History

The dish is strongly associated with Córdoba and Andalusia, where it was traditionally made with the tails of bulls from the bullring. Today it is usually made with ordinary oxtail.
