History

Shish tawook is the Levantine and Turkish skewered chicken; the name joins şiş (skewer) with tavuk, Turkish for chicken. It became a staple of Lebanese grills and is now sold across the Middle East and the Gulf. In Saudi Arabia the plate usually comes with a large serving of garlic sauce.
