🍢 Shish Tawook
Shish tawook is cubes of chicken breast marinated in yogurt, lemon juice, garlic, tomato paste and paprika, then threaded on skewers and grilled. The yogurt and lemon tenderise the meat, while the tomato paste and paprika give it its orange colour and light smoky edge. It is tender, tangy and served with salad, pickles and grilled vegetables.

- 3 garlic cloves, crushed
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tbsp olive oil

- Pair it with a big salad instead of fries.
- Grill rather than pan-fry so no extra fat is needed.
History
Shish tawook is the Levantine and Turkish skewered chicken; the name joins şiş (skewer) with tavuk, Turkish for chicken. It became a staple of Lebanese grills and is now sold across the Middle East and the Gulf.
