🍜 Bibim naengmyeon (spicy cold noodles)
Bibim naengmyeon is a bowl of thin, very chewy buckwheat noodles served ice-cold and coated in a spicy-sweet gochujang sauce sweetened with grated Asian pear. It is topped with crunchy cucumber, slices of pear, half a boiled egg and toasted sesame seeds. The noodles are traditionally cut with scissors at the table, and the bowl is mixed thoroughly so every strand is red with sauce.

Recipe
Ingredients
- 300 g buckwheat noodles for naengmyeon
- 3 tbsp gochujang
- 1/2 Asian pear: half grated, half thinly sliced
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1 garlic clove, grated, and 1 tsp chilli flakes
- 1/2 cucumber, cut into thin strips
- 2 eggs, hard-boiled and halved
- 1 tbsp toasted sesame seeds
Method
- Mix the gochujang, grated pear, vinegar, sugar, garlic and chilli flakes into a sauce and let it rest in the fridge while you prepare the rest.
- Boil the noodles for 1–2 minutes, or according to the package, until just tender.
- Drain and rinse them very well in cold water, rubbing to remove the starch, then chill in ice water and drain.
- Twist the noodles into nests in two bowls and spoon the sauce on top.
- Add the cucumber, pear slices and egg halves, sprinkle with sesame seeds and mix well before eating.
How to make it lighter
- Use a smaller nest of noodles and double the cucumber and pear to keep the bowl large and refreshing.
- Grated pear sweetens the sauce naturally, so the sugar can be cut to 1 tsp — each teaspoon of sugar is about 16 kcal.
- Go easy on the sesame seeds: 1 tsp per bowl is enough for aroma.
History
Naengmyeon, or cold noodles, come from the northern part of the Korean Peninsula, and the spicy mixed style is often associated with the city of Hamhung. People who moved south during and after the Korean War brought these noodles with them, and today bibim naengmyeon is a summer staple across South Korea.
