🥔 Causa de pollo
Causa de pollo is the chicken version of Peru's chilled layered potato dish. Smooth mashed yellow potato seasoned with aji amarillo chili is layered with shredded chicken bound in mayonnaise and slices of ripe avocado, then served cold. It is creamy and mildly spicy, with soft potato, rich chicken filling and buttery avocado in every bite.

- A portion of about 150 g with a green salad makes a balanced light lunch.
History
Causa is built on Peru's native yellow potatoes and aji amarillo chili, and the chicken filling is one of the most common variations alongside tuna. The origin of the name is uncertain, with several popular stories in circulation. Today causa de pollo is served across Peru as a starter or light lunch.
