Recipe
Ingredients
- 1 kg potatoes for fries
- 500 g beef sirloin, cut in thin strips
- 3 onions, sliced
- 4 eggs
- 3 garlic cloves
- Oil for frying (about 4 tbsp for the pan, extra for the fries)
- 1 tsp oregano
- Salt and pepper
Method
- Cut the potatoes into sticks and fry or bake them at 220 °C until golden and crisp; salt them.
- Season the beef strips with salt, pepper, garlic and oregano.
- Fry the onion in a wide pan with a little oil until soft and golden, then set aside.
- Sear the beef strips in the same hot pan for 2–3 minutes and return the onion.
- Pile the fries on a large platter, top with the beef and onion, and finish with fried eggs.
How to make it lighter
- Bake the fries in the oven with a spray of oil instead of deep frying; this removes a large part of the fat.
- Use lean beef and double the onion: it adds flavour and volume for few calories.
- Share it with more people and add a salad, so each person takes a smaller portion of fries.
History
Chorrillana is closely tied to the port city of Valparaíso, where it is a local classic. It is made by layering fries, beef and onion on one platter and finishing with eggs. The dish is meant to be shared, and it is as much about company as about food. Variations with sausage or cheese exist in many places.
