A çiğ köfte dürüm is the street-food form of Turkey's spicy bulgur köfte: the kneaded bulgur and tomato paste mixture is spread on thin lavash, topped with crisp lettuce and other greens, drizzled with tangy pomegranate molasses and rolled tight. It is spicy, chewy and fresh at once, and is eaten on the go, often with a squeeze of lemon.
