🧀 Cream cheese (portion)
A portion of cream cheese is a small serving of soft, unripened fresh cheese with a mild, slightly tangy taste and a smooth, spreadable texture. It is most often spread on toast, bagels or crackers, but also goes into dips, sandwiches and cheesecakes. A typical portion is about two tablespoons, the amount spread on one bagel or two slices of toast.

What it is made of
Recipe
Ingredients
- 30 g cream cheese
- Optional: chopped chives or dill
- Optional: freshly ground black pepper
- Optional: cucumber or radish slices to serve
Method
- Take the cream cheese out of the fridge 10 minutes before serving so it spreads easily.
- Stir in chopped herbs and a pinch of pepper if you like.
- Spread thinly or serve alongside sliced cucumber or radish.
How to make it lighter
- Weigh it once: a heaped knife of spread can easily be 40–50 g rather than 30 g.
- Spread it thinly and add volume with cucumber, tomato or radish slices.
- Herbs, pepper and lemon zest add flavour so a smaller amount feels satisfying.
History
Soft fresh cheeses made from cream have a long history in Europe, and the American style of cream cheese is usually traced to New York State in the 1870s, where dairymen began producing it commercially. Today it is a breakfast staple across North America and much of the world.
