🍓 Eton Mess
Eton mess is a simple English dessert of broken meringue, softly whipped cream and fresh strawberries folded together just before serving. It combines crunchy and chewy meringue with airy cream and juicy fruit. It is served cold in glasses or bowls, especially in summer.

Recipe
Ingredients
- 400 g strawberries
- 200 ml whipping cream
- 4 meringue nests (about 60 g)
- 1 tsp sugar
Method
- Hull the strawberries; mash a quarter of them with the sugar and halve the rest.
- Whip the cream to soft peaks.
- Break the meringues into bite-size pieces.
- Gently fold the cream, meringue, halved strawberries and mashed strawberries together so it looks rippled.
- Spoon into glasses and serve immediately.
How to make it lighter
- Use more strawberries and less cream — the fruit adds volume for few calories.
- Skip the extra sugar; the meringue is sweet enough.
- Serve in small glasses to keep portions modest.
History
The dessert is named after Eton College, where it is traditionally associated with the annual cricket match against Harrow. The often-told story of a dropped pavlova is generally considered a legend, and early versions are said to have been made without meringue.
