🍤 Shrimp fresh spring rolls
These fresh spring rolls wrap poached shrimp, rice vermicelli, crisp lettuce and mint in soft rice paper. Served cold and unfried, they are light and chewy, with the shrimp visible through the wrapper. Their signature partner is a rich peanut dipping sauce, which brings sweetness and savoury depth to the clean, herbal rolls.

Recipe
Ingredients
- 12 rice paper sheets
- 400 g shrimp
- 150 g rice vermicelli
- 1 head lettuce, leaves separated
- 1 large bunch mint
- 120 ml peanut sauce, for dipping
Method
- Poach the shrimp in salted water for 2 minutes, cool, peel and halve lengthwise.
- Cook the vermicelli according to the packet, rinse in cold water and drain well.
- Dip a rice paper sheet in warm water for a few seconds and lay it flat.
- Arrange lettuce, vermicelli and mint near the bottom, place shrimp halves above.
- Fold in the sides and roll up tightly; repeat with the remaining sheets.
- Serve with the peanut sauce in a small bowl for dipping.
How to make it lighter
- The peanut sauce is the most calorie-dense part — dip lightly or thin it with a little warm water and lime juice.
- Fill the rolls with more lettuce and mint and less vermicelli.
- Count the rolls you eat — two or three make a light portion.
History
Fresh rice paper rolls are most closely associated with southern Vietnam, where they are a common market and street snack. Shrimp-only versions served with peanut sauce are especially popular in Vietnamese restaurants abroad.
