Himmel und Erde, "heaven and earth", is a German dish of mashed potatoes mixed with stewed apples, topped with slices of fried black pudding and onions browned in butter. The "earth" is the potato and "heaven" the apple from the tree, and together they make a sweet-savoury, comforting plate. It is a hearty autumn and winter meal.
