🍜 Khao Piak Sen
Khao piak sen is a Lao chicken noodle soup with thick, slightly chewy rice noodles cooked directly in a broth flavoured with galangal. The noodles release starch, giving the soup a silky body. It is topped with shredded chicken, fresh dill and cilantro and served with lime wedges and chili on the side.
