🍒 Sour Cherry Cake (Kolač sa Višnjama)
Kolač sa višnjama is a simple Balkan sheet cake made with flour, sugar, eggs and butter, studded with sour cherries that sink into the soft crumb as it bakes. The result is moist and tender, with tart pockets of fruit balancing the sweetness. It is cut into squares and served with coffee, often dusted with sugar.

- 250 g flour
- 200 g sugar
- 4 eggs
- 150 g butter, melted
- 400 g sour cherries, pitted
- 1 tsp baking powder
- Pinch of salt
Method
- Heat the oven to 180 °C and line a 25×35 cm tin.
- Beat the eggs with the sugar until pale, then stir in the melted butter.
- Fold in the flour, baking powder and salt.
- Spread in the tin and scatter the cherries over the top.
- Bake 35–40 minutes until golden; cool and cut into squares.
How to make it lighter
- Cut 12 squares instead of 8 — smaller pieces, same cake.
- Reduce the sugar by a quarter; the cherries give plenty of flavor.
- Serve it with extra fresh cherries to fill the plate.
History
Sour cherry cakes are a summer favorite in home kitchens across Serbia, Croatia and Bosnia, made when the cherries ripen.
