Recipe
Ingredients
- 300 g firm white fish fillet, cut into chunks
- 300 g peeled shrimp
- 500 g clams in the shell, cleaned
- 500 g mussels in the shell, cleaned
- 1 red onion, finely sliced
- Juice of 3 lemons
- Handful of chopped cilantro
- 1 fresh chili, minced (optional)
- Salt, 1 tbsp olive oil
Method
- Bring 500 ml of salted water to the boil in a wide pot. Add the clams and mussels, cover and cook 3–5 minutes until they open; discard any that stay closed.
- Lift out the shellfish, then poach the fish and shrimp in the same water for 2 minutes until just cooked.
- Remove the shellfish from the shells if you like; keep a few in the shell for serving. Strain the cooking liquid and keep 150 ml.
- Soak the sliced onion in cold water for 10 minutes, then drain.
- Mix the seafood with the onion, lemon juice, cilantro, chili, olive oil, salt and the reserved cooking liquid.
- Chill for at least 30 minutes and serve cold in bowls.
How to make it lighter
- This is a very light dish at about 60 kcal per 100 g, mostly protein; keep the oil to one spoonful.
- Serve it with a green salad or a small portion of boiled potato instead of bread.
- Use plenty of lemon, onion and cilantro for flavour, so you need no cream or mayonnaise.
History
Seafood is central to Chilean food because of the country’s very long Pacific coastline, and mariscal is a simple way to enjoy it fresh. Shellfish is the heart of the dish, and lemon, onion and cilantro keep the flavours clean. You will find it in coastal markets and seafood restaurants, where it is often eaten with a squeeze of extra lemon.
