🍕 Pizza salsiccia e friarielli
Pizza with salsiccia and friarielli is a Neapolitan favourite: tomato and mozzarella topped with crumbled fresh Italian pork sausage and friarielli, the slightly bitter broccoli rabe greens of Campania. The fatty, fennel-scented sausage balances the bitterness of the greens. It is baked in a wood-fired oven and served whole.

Recipe
Ingredients
- 250 g ready pizza dough (or homemade)
- 150 g crushed tomatoes
- 125 g mozzarella, torn
- 150 g fresh Italian sausage, skinned
- 150 g friarielli (broccoli rabe)
- 1 garlic clove, 1 small chili
- 1 tbsp olive oil, salt
Method
- Blanch the friarielli for 2 minutes, drain, then sauté with oil, garlic and chili for 5 minutes.
- Preheat the oven with a stone or tray inside to the maximum.
- Stretch the dough by hand into a 30 cm round, leaving a slightly thicker rim.
- Spread the tomato, scatter the mozzarella, then add the greens and pieces of sausage.
- Bake on the hottest setting of the oven (250–280 °C) on a preheated stone or tray for 7–10 minutes until the crust is blistered.
- Serve hot.
How to make it lighter
- Use half the sausage and more greens.
- Brown the sausage first and drain the fat before topping.
- Eat half a pizza with a large green salad instead of a whole pizza alone.
History
Sausage with friarielli is a traditional pairing in Neapolitan home cooking, often eaten in a sandwich, and it moved naturally onto pizza. In Naples it is often made as a white pizza, without tomato.
