🌮 Suadero tacos
Tacos de suadero are filled with thin beef cut, here brisket, slowly confited and then chopped and crisped on a round griddle. The meat is soft and juicy with crunchy edges. Served in small corn tortillas, the tacos are topped with chopped onion and cilantro, a spoonful of red salsa roja and a squeeze of lime.

What it is made of
Recipe
Ingredients
- 800 g beef brisket, cut into thin strips
- 1 onion, halved, plus 1 onion finely chopped
- 3 garlic cloves, salt
- 3 tbsp vegetable oil
- 12 small corn tortillas
- 200 ml salsa roja
- 1 bunch cilantro, 2 limes
Method
- Put the beef in a pot with the halved onion, garlic, salt and water just to cover and simmer, covered, for about 2 hours until tender.
- Uncover and let the liquid cook away so the meat begins to fry in its own fat and the oil.
- Chop the meat and crisp it on a hot griddle for a few minutes.
- Warm the tortillas on the griddle.
- Fill with meat, top with chopped onion, cilantro and salsa roja and serve with lime.
How to make it lighter
- Drain the meat well on paper before filling the tortillas — much of the fat stays behind.
- Two tacos instead of three already trims the plate noticeably.
- Pile on onion, cilantro, lime and salsa — they add a lot of flavour for very few calories.
History
Suadero tacos are a speciality of Mexico City, where they are sold at street stands that cook the meat in its own fat on a domed griddle. They remain one of the city's signature late-night street foods.
