🍫 Torta Caprese
Torta caprese is a flourless Italian cake made from dark chocolate, ground almonds, butter, eggs and sugar. It bakes into a thin crisp crust over a dense, fudgy and slightly moist interior with a nutty flavour. It is usually dusted with icing sugar and served in thin slices.

Recipe
Ingredients
- 200 g dark chocolate
- 200 g ground almonds
- 150 g butter
- 4 eggs
- 150 g sugar
- pinch of salt
- 1 tbsp icing sugar for dusting
Method
- Heat the oven to 170 °C and line a 24 cm tin.
- Melt chocolate and butter together gently, then let cool slightly.
- Beat eggs with sugar and salt until pale and thick.
- Fold in the chocolate mixture, then the ground almonds.
- Pour into the tin and bake 35–40 minutes until set at the edges and slightly soft in the centre.
- Cool completely and dust with icing sugar.
How to make it lighter
- Cut 12 slices instead of 8: the cake is rich and a thin slice satisfies.
- Serve with fresh berries instead of a scoop of ice cream.
- Use chocolate with 70% cocoa for more flavour per gram and less sugar.
History
The cake is named after the island of Capri, and local lore says it was born when a baker forgot to add flour, though this story cannot be verified. It is now a staple of pastry shops along the Amalfi Coast and in Naples, and is naturally gluten-free.
