Zürich-style geschnetzeltes is thinly sliced veal seared quickly and finished in a creamy sauce with mushrooms, onions and a splash of white wine. The veal strips stay tender and the sauce is rich and velvety. It is usually spooned onto plates beside rösti, rice or noodles, though this entry covers the veal and sauce alone.
