🥞 Dorayaki
Dorayaki are two small, fluffy honey pancakes sandwiched around a thick layer of sweet red bean paste. The pancakes are golden brown on the outside, soft and slightly springy inside, and the honey gives them a gentle caramel note. They are a classic Japanese snack, eaten with green tea.

Recipe
Ingredients
- 2 eggs
- 80 g sugar
- 1 tbsp honey
- 120 g wheat flour
- 1/2 tsp baking powder
- 60 ml water
- 300 g sweet red bean paste
- 1 tsp oil for the pan
Method
- Whisk the eggs, sugar and honey until pale and frothy.
- Fold in the flour and baking powder, then stir in the water to make a thick, pourable batter. Rest for 15 minutes.
- Wipe a pan with a little oil and cook small rounds over low heat until bubbles appear, then flip for 30 seconds.
- Cool the pancakes under a cloth, then sandwich pairs with the red bean paste.
How to make it lighter
- One dorayaki is a satisfying snack portion — enjoy it slowly with unsweetened tea.
- Spread the bean paste a little thinner to cut the sugar.
- Grease the pan with a paper towel instead of pouring in oil.
History
The name is usually linked to dora, the Japanese word for gong, because of the pancakes' round shape; stories about its origin vary. The modern two-pancake form became popular in the early 20th century and is now sold in sweet shops and convenience stores throughout Japan.
