🍔 Gourmet pljeskavica
Gurmanska pljeskavica is the 'gourmet' version of the famous Serbian grilled patty: a large, flat burger of minced beef and pork stuffed or topped with kajmak, a rich clotted dairy cream, plus cheese, bacon and mushrooms. Grilled over charcoal, it is smoky outside, juicy inside and melts into a creamy, salty filling. It is served with chopped onion and a side salad, often with grilled vegetables.

Recipe
Ingredients
- 300 g minced beef
- 200 g minced pork
- 2 garlic cloves, crushed
- 100 g kajmak
- 60 g hard cheese, grated
- 60 g bacon, finely chopped
- 100 g mushrooms, finely chopped
- Salt, pepper, 1 onion for serving
Method
- Fry the bacon and mushrooms until golden and let them cool; mix with the kajmak and cheese.
- Mix the beef, pork, garlic, salt and pepper and knead well; divide into 8 portions.
- Flatten each portion into a thin round; place the filling on four rounds, cover with the others and seal the edges.
- Grill over hot charcoal or in a grill pan for 5–6 minutes per side until cooked through.
- Serve with finely chopped onion and a fresh salad.
How to make it lighter
- Use lean beef only and leave out the bacon to cut the fat noticeably.
- Halve the kajmak and cheese — the filling still melts, with fewer calories.
- Serve it with a big salad instead of fries.
History
Pljeskavica is a staple of Serbian grill culture, and the city of Leskovac in southern Serbia is famous for it and holds an annual grill festival. The gourmet variation with cheese, kajmak and bacon is a standard item in roštilj restaurants across Serbia and the wider Balkans.
