🍖 Leskovac grill (Leskovački roštilj)
Leskovački roštilj is a Serbian mixed grill of beef and pork cuts, spicy sausages and patties cooked over charcoal. The meat is smoky and juicy, with a peppery kick typical of the Leskovac style. It is served on a platter with raw chopped onion, a spoonful of creamy kajmak and roasted red pepper ajvar on the side.

Recipe
Ingredients
- 400 g minced beef
- 300 g minced pork
- 4 fresh grilling sausages (beef and pork)
- 1 tsp hot paprika, 1 tsp salt, ½ tsp black pepper
- 2 onions, finely chopped
- 4 tbsp kajmak
- 4 tbsp ajvar
Method
- Mix the beef and pork with paprika, salt and pepper and knead well. Chill for 20 minutes.
- Shape the mince into small fingers (ćevapi) and flat patties.
- Grill the meat and sausages over hot charcoal or a grill pan for 8–12 minutes, turning, until cooked through.
- Arrange on a platter with chopped onion, kajmak and ajvar on the side.
How to make it lighter
- A mixed platter adds up fast — share one between two and fill up on raw onion and a big tomato-cucumber salad.
- Kajmak is rich; 1 tbsp instead of 3 saves roughly 100 kcal.
- Choose leaner beef cuts or skewers over sausages, which carry the most fat.
History
The town of Leskovac in southern Serbia is widely regarded as the home of Serbian grilling, and it hosts a large annual grill festival, the Roštiljijada. Its grill masters became known across the former Yugoslavia for spicy minced-meat specialities. Today Leskovac-style grill is found in grill houses throughout Serbia and the Balkans.
