🍖 Galbi (Korean short ribs)
Galbi, also spelled kalbi, is Korean grilled beef short ribs marinated in soy sauce, grated pear, garlic, sugar and sesame oil. The pear tenderises the meat, and the sugar caramelises on the grill for a sweet, savoury, smoky crust. The ribs are often cut thin across the bone (LA-style) and eaten wrapped in lettuce with rice and side dishes.

Recipe
Ingredients
- 1 kg beef short ribs, thinly cut across the bone
- 5 tbsp soy sauce
- 1 Asian pear, grated
- 5 garlic cloves, grated
- 2 tbsp sugar
- 1 tbsp sesame oil
- 2 scallions, chopped, black pepper
Method
- Soak the ribs in cold water for 20 minutes to remove bone fragments and blood; pat dry.
- Mix the soy sauce, pear, garlic, sugar, sesame oil, scallions and pepper.
- Coat the ribs in the marinade and refrigerate for at least 4 hours or overnight.
- Grill over high heat or in a grill pan for 2–3 minutes per side until caramelised.
- Cut into pieces with scissors and serve with lettuce leaves and rice.
How to make it lighter
- Short ribs are fatty: trim visible fat before marinating and keep to a palm-sized portion.
- Wrap the meat in lettuce and load up on vegetable side dishes instead of extra rice.
- Halve the sugar in the marinade; the pear still adds sweetness.
History
Galbi means ‘rib’ in Korean, and grilled marinated ribs are a centrepiece of Korean barbecue. The thin cross-cut ‘LA galbi’ style is usually credited to Korean immigrants in Los Angeles.
