🍳 Menemen
Menemen is a Turkish breakfast dish of eggs softly scrambled into a sauce of tomatoes, green peppers and onion cooked in butter. It is juicy and spoonable rather than firm, sweet from the tomatoes with a gentle heat from the peppers. It is brought to the table in the small pan it was cooked in, usually as part of a larger breakfast spread.

Recipe
Ingredients
- 4 eggs
- 3 ripe tomatoes, peeled and chopped
- 2 long green peppers, sliced
- 1 small onion, chopped
- 15 g butter
- salt and pepper, chilli flakes to taste
Method
- Melt the butter in a small pan and soften the onion and peppers for 5 minutes.
- Add the tomatoes and cook 6–8 minutes until saucy.
- Crack in the eggs, season, and stir gently just until they are softly set.
- Sprinkle with chilli flakes and serve straight from the pan.
How to make it lighter
- Use half the butter in a non-stick pan; the tomatoes add plenty of moisture.
- Use 1 whole egg and 2 egg whites per serving for a lighter version.
- Pair it with fresh cucumber, tomato and herbs to make the plate more filling.
History
Menemen is a staple of Turkish breakfast tables and is generally thought to take its name from the town of Menemen near İzmir, though this is not certain. Whether onion belongs in it is a famous friendly debate in Türkiye. Today it is served in homes and breakfast cafés across the country.
