Thai basil eggplant is a vegan stir-fry of long Asian eggplant cooked until soft and silky, then tossed with garlic, fresh chilies, soy sauce and a big handful of Thai basil. The eggplant soaks up the salty, garlicky sauce while the basil adds an anise-like freshness. It is served hot as a side or main dish with steamed jasmine rice.
