🍢 Anticuchos de corazón (beef heart skewers)
Anticuchos de corazón are the original Peruvian anticuchos: thin slices of beef heart soaked in a smoky red marinade of aji panca, vinegar, garlic and cumin, threaded onto cane skewers and seared over charcoal. The result is smoky, gently spicy and surprisingly tender. They are eaten hot from street grills, usually with potatoes and corn.

How to make it lighter
- A plate of two skewers is mostly protein — the sides decide the calories.
- Choose corn or potato, not both, and add a salad.
- Brush with marinade rather than oil; 1 tbsp oil is about 120 kcal.
History
Corazón means heart, and beef heart is the classic cut for anticuchos in Peru. The dish is usually traced to colonial times, when enslaved Africans turned this inexpensive cut into a grilled speciality, building on older Andean skewer traditions. Today anticuchos de corazón are a fixture of Lima's evening street food.
