Sushi don is a bowl of seasoned sushi rice topped with slices of raw salmon, ripe avocado, strips of nori and a sprinkle of sesame seeds, with soy sauce on the side. It offers the flavours of sushi without rolling: soft, slightly tangy rice, buttery fish and creamy avocado. It is eaten with chopsticks as a quick, filling one-bowl meal.

History

Bowls of vinegared rice with raw fish on top, known in Japan as chirashi or kaisendon, are a long-standing home and restaurant dish. The salmon-and-avocado combination reflects more recent, international tastes.
