🌯 Chicken dürüm (tavuk dürüm)
Tavuk dürüm is a Turkish wrap of grilled, spiced chicken rolled tightly in thin lavash with tomato, onion and crisp lettuce. The bread is often warmed on the grill so it turns soft with a few charred spots. It is a classic street-food lunch, eaten by hand straight from its paper wrapping.

- 2 tomatoes, sliced
- 1 onion, thinly sliced
- Lettuce leaves
- 1 tbsp oil
- Paprika, cumin, salt, black pepper, sumac
Method
- Toss the chicken with oil and spices and leave 20 minutes.
- Grill or pan-fry until cooked through and lightly charred, then slice.
- Warm the lavash briefly on the grill.
- Fill with chicken, tomato, onion and lettuce, roll tightly and serve.
How to make it lighter
- Use chicken breast instead of thigh for a leaner wrap.
- Load up on lettuce and tomato and use a little less chicken and bread.
- Grill rather than fry, and brush on the oil instead of pouring it.
History
Dürüm means 'roll' in Turkish; the wrap comes from the country's kebab shops, where grilled meat is rolled in lavash to eat on the go. Chicken versions are popular in Turkey and in kebab shops across Europe.
